Delicata Squash is back

My favorite winter squash is back for the season. Delicata squash is best roasted and eaten on its own or my favorite on top of arugula!  This squash has an edible skin, and the flesh is dense and holds its shape well when cooked! It has a nutty and slightly sweet flavor and is perfect for any fall dish.

It is rich in antioxidants, vitamins A and C, and fiber. Even better is that it is low in calories and carbs. I prefer to roast but when in a pinch for time the air fryer works great.

Instructions on how to prepare and cook.

1. Preheat oven to 425°F. Cut in half lengthwise and scoop out seeds.

2. Slice into ¼ to ½ inch slides.  Toss with olive oil and spread onto a parchment paper lined baking sheet in a single layer.

3. Roast for 20 minutes. Flip each slice over and roast for an additional 10-15 minutes until golden brown and crispy on the outside and tender on the inside. I prefer to season my vegetables after taking them out of the oven. Salt and pepper work but I really like Trader Joes Citrusy Garlic Seasoning Blend. Enjoy it on its own or add it to your favorite salad or grain bowl.

Air Fryer instructions – After preparing the squash roast at 400 for 10-12 minutes in the air fryer tossing every 4 minutes.
